- 3/4 cup chopped fresh cilantro
- 1/2 cup whole-milk or low-fat Greek yogurt
- 1 Tbs. apple cider vinegar
- 1 Tbs. pure maple syrup
- 1 Tbs. olive oil
- Grated zest and juice of 1 lime
- 1/2 jalapeño, seeded, chopped
- 1 tsp. kosher salt + more to taste
- 1/2 tsp. garlic powder
- 1/2 tsp. ground black pepper
- 12 oz. brown rice farfalle, rice-and-corn-based farfalle or regular farfalle
- 3 cups medium-diced store-bought rotisserie chicken
- 1 1/2 cups cooked fresh corn kernels (from 2 ears), thawed frozen corn or 1 (15 oz.) can, drained
- 1 pint cherry tomatoes, halved (about 1 1⁄2 cups)
- 3 green onions, finely chopped
- 1/2 cup finely chopped fresh cilantro
Instructions
Make cilantro-lime dressing: In blender or food processor, combine cilantro, yogurt, vinegar, maple syrup, oil, zest and juice, jalapeño, salt, garlic powder and black pepper. Blend on high until completely smooth, about 1 min. If needed, season with more salt. Transfer to small bowl; set aside.
Make pasta salad: In pot of boiling water, cook pasta until al dente according to package directions. Drain and rinse with cold water.
In large bowl, combine pasta, chicken, corn, cherry tomatoes, green onions and cilantro. Pour in half of dressing and toss until everything is fully coated. Place in refrigerator to chill for at least 15 min. before serving. Serve salad in bowls and drizzle with more dressing, if desired.
