Best birria grilled cheese? Check out this Daytona-area food truck

Tracking down a good food truck can take a little commitment, but across the Volusia-Flagler region, these roaming kitchens prove that some of the area's most memorable bites don't always come with a permanent location.

From sauced Jamaican plates to Asian fusion creations, I recently rounded up four of the best food truck finds in the Daytona Beach area, and here's one of my favorites.

Double Dippin

Double Dippin is no under-the-radar operation to local foodies, but rather a name that has become synonymous with Latin eats worth tracking down.

For more than three years, this mobile kitchen has become a local go-to for crispy tacos, rich consommé and slow-braised meats piled into just about everything on its menu.

From weddings to birthday celebrations, private gatherings and community events, the two-time Best of the Best Daytona nominee caters to every occasion with its scratch-made birria stealing the show.

Enjoy it folded into the "dunkable bliss" of three crispy corn tortillas, layered with melted cheese, fresh cilantro and red onion; packed into a golden quesadilla; or wrapped into a hearty burrito, combining Spanish rice and layers of cheese with onion, cilantro and a smoky garlic chipotle aioli that clings to every bite.

My choice? Start with the chicken empanadas - a thick, flaky pastry bursting with generously seasoned, Spanish-style shredded chicken, fire-roasted tomatoes and the subtle kick of that same creamy aioli.

Follow them up with the truck's birria grilled cheese - two pieces of thick-cut Texas toast smothered in Double Dippin's homemade garlic spread and piled high with fresh cilantro and red onion, flavor-dripping birria meat, gooey cheese and hefty drizzling of creamy garlic aioli.
