Coral Springs sushi hub had 5 high-priority violations, according to inspectors
Saisaki Sushi & Kitchen, located at 6240 Coral Ridge Drive, had five high-priority violations after a recent state health and safety visit, according to inspectors.
In its third assessment of the year, the Asian fusion establishment saw 10 total violations on Sept. 22, then met inspection standards in a follow-up visit two days later.
High-priority violations are those that could contribute directly to a foodborne illness or injury and include items such as cooking, reheating, cooling and hand-washing. Saisaki had five — several of them similar to violations noted in July.
The Department of Business and Professional Regulation’s inspector observed approximately 15 small flying insects in the restaurant’s storage area. Though the space is separated from the kitchen and dining spaces, the bugs pose a health risk when allowed to lay eggs in or around food.
According to public records, the inspector also found a number of temperature-related violations, which risk exposing customers to bacteria and foodborne illnesses such as salmonella and food poisoning.
The inspector filed a number of temperature-related violations for rice, tofu, and half ‘n half, all of which had been stored at temperatures as much as 10 degrees hotter than the law requires.
Saisaki operators also received a violation for storing raw shrimp above ready-to-eat carrots in the restaurant’s kitchen.
Though raw shrimp is a delicacy and relatively common in sushi establishments, the crustaceans can carry parasites, bacteria and viruses. Storing them near ready-to-eat foods is a contamination risk that could leave an unaware customer seriously ill.
Cross contamination issues were resolved during the inspector’s visit. Workers were ordered not to serve the offending items, and discarded all of them.
The inspector also filed five basic violations — the lowest-risk category, which encompasses industry-best practices.
Issues with temperature control were noted again, as records show repeated offenses for improperly thawing raw chicken on a shelf above the cook line.
Other citations included food debris buildup on floors under kitchen equipment and prep areas and accumulated grease and dust on the stove exhaust hood, utility lines, a nearby portable fan, and walls throughout the kitchen.
Despite these issues, Saisaki’s Coral Springs location continues to see largely positive reviews on sites such as Yelp and Facebook.
