Mitch’s Downtown Bagel Cafe announces opening date for Coral Springs restaurant
A longtime breakfast-and-lunch favorite is set to return to Coral Springs as Mitch’s Downtown Bagel Cafe finds a new home in the Cornerstone development.
The reimagined New York-style eatery is scheduled to open on Monday, March 23, Adam Shidlofsky, who now runs the brand, told the Coral Springs News on March 9.
The restaurant will serve up a variety of locally made bagels and spreads, plus popular dishes such as matzo ball soup, French toast, omelettes and pastrami sandwiches.
“It’s a homecoming for us,” Shidlofsky told the Coral Springs News in December.
Mitch’s Downtown backstory
Mitch Shidlofsky, the brand’s namesake and Adam’s father, moved from New York City to Coral Springs in 1993 with his wife and older son. He saw the bagel business as a way to make money and spend more time with his family — including Adam, his second son, who was born and raised in Northwest Broward.
Longtime residents may recognize Shidlofsky for an earlier project. In 2002, West Side Bagels established its first location next to the Heron Bay shopping center in Coral Springs and expanded to six locations.
But, Mitch Shidlofsky didn’t want his children getting into the often-turbulent restaurant industry — and Adam Shidlofsky said he had no plans to go against his father’s wishes. He became an accountant and landed a job with a New York City firm.
Then, the COVID-19 pandemic hit. Shidlofsky moved home and worked remotely as initial lockdowns stretched from weeks to months.
It was then that he took an interest in the bagel business — and how it could evolve during the digital age, where marketing and online presence are major factors in success.
“My dad’s a very old school guy,” Shidlofsky said. “One day I kept asking and asking, and he said, ‘OK, go bake bagels at 4 a.m.’”
The younger Shidlofsky did just that — working full time for the New York accounting firm and spending his weekends learning everything he could about how the business worked.
By November 2021, he was running the Fort Lauderdale location, with plans to rebrand and expand to other cities around South Florida.
The new Mitch’s Downtown Bagel Cafe markets itself as an elevated New York-style deli with trendy South Florida flair.
What’s next?
Mitch’s Downtown Bagel Cafe plans to open March 23 in the Cornerstone Development at 3334 N. University Drive.
A grand opening is tentatively planned for the end of April, Shidlofsky told the Coral Springs News. Past events have included ceremonial ribbon cuttings with elected officials in attendance.
Mitch’s currently has locations in Fort Lauderdale, Weston and Hallandale Beach. A fifth location is also on its way to Coral Gables, with an opening planned for late 2026.
